There’s a quiet kind of magic to this place – a 40-acre vineyard, orchard and wild spa tucked away in a picturesque Somerset village. Everything here is grown, crafted and curated by hand, from the cider apples and vines to the joyful interiors of the 3 beautifully designed retreats. Romantics will love the Vine Hut — an exquisitely crafted shepherd’s hut with huge views and an alfresco tub — or the secluded Lambing Shed, set in an orchard, with a wood-fired bath under the trees. If you’re coming with kids, you can add on an authentic Gypsy Caravan, too, super quirky. Bigger families and friends can book the Coach House, a spacious 2-bedroom barn conversion filled with vintage finds and warm, creative energy.

Founded by husband-and-wife duo Sophie and Panu — who left London behind to build this haven from the ground up — the whole site is an inspiring blend of design, sustainability and nature. Slow days are the rhythm here: morning lake swims followed by a wood-fired sauna in the wild spa; yoga, massages or sound baths; meandering walks through wildflower meadows; and evenings under the stars, glass of something home-grown in hand. It’s a creative, comforting, completely immersive escape – and this is just the beginning.

“Thornfalcon was born in 2023, to marry our love of great food and drink, hospitality, the West Country and wildlife conservation. We moved into a beautiful 250-year old farm in the heart of West Somerset, and set out to create a boutique winery and nature-based hospitality experience. Panu has a long history in the London drinks industry spanning 25 years; now he’s turned his hand to the growing of the vines and the alchemy of winemaking, alongside studying for a diploma in wine. I was previously at the V&A – the family of museums dedicated to the power of creativity – where my love of pattern, textiles and design was fostered. The past 2 years have been a hive of activity; planting vineyards, restoring our ancient cider orchards, building the winery and creating the accommodation.” Owners, Panu & Sophie

You’ll need to drive to pubs/shops/restaurants (10 mins). No WiFi in the smaller cabins; they have an unplugged ethos.

  • I can't recommend the Vine Hut enough, from the moment we arrived, our stay here was nothing short of magical. Sophie and Panu are so welcoming and helpful, ensuring we had everything we needed for our stay and gave us the perfect recommendations. The hut itself was beautifully designed, impeccably clean and very comfortable, larger than usual huts I'd say and has absolutely everything you might need. All the little details and personal touches really do shine through and make you feel at home. The setting of the hut was wonderful, overlooking the growing vines and it felt very private which was lovely. We just switched off totally for a couple of days and loved being able to star gaze from the outdoor copper bath and the fire pit, go for local walks and loved the ssuna and hot tub by the lake - what a perfect way to spend a lazy afternoon. We loved every minute of our stay here, left feeling rejuvenated and can't wait to visit again.

Sustainability.

Sustainability, wildlife conservation and organic farming are at the heart of everything here. All fruit and vegetables are organic, and the juice and ciders are 100% apple – zero spray, hand picked and hand pressed. Much of the electricity is offset by solar, and the Coach House is on ground source heating. The Wild Spa is all off-grid, and there’s a bore hole by the lake. Wildlife conservation is a major focus, and they create and support habitats including wildflower meadows & woodland. Sophie and Panu plan to plant an additional 1000 trees over the next 2 years.

  • Lovely Ilminster is 15 mins drive, and has a wonderful butcher, greengrocer, deli and cheesecake shop. It’s also home to Alice Temperley’s design atelier and fantastic outlet shop.
  • Nearby Burrow Hill — a renowned cider producer — comes alive on Saturdays from May to September when drinks are served from a double decker bus, and acrobats, bands and food trucks are all in-situ.
  • Admire world-class exhibitions at Bruton’s Hauser & Wirth gallery, or visit the excellent CLOSE gallery 5 mins away, to see contemporary artists and exhibitions. Find beautiful treasures at Dennis Chinaworks in Shepton Beauchamp or discover the ancient art of weaving at the Coates English Willow centre.
  • Barrington Court (National Trust) has beautiful farmland, an elegant old Tudor mansion, and a number of artisan makers. At Easter and Halloween, seasonal family trails take you through the orchards and gardens.
  • Somerset’s epic Carnivals in November claim to be the largest illuminated processions in the world. Thousands of people take to the streets to watch hundreds of spectacular carnival floats go past.
  • The ancient market town of Glastonbury is steeped in myths and legends. Glastonbury Tor – said to be the gateway to the land of the dead – sits high on the hill overlooking the town. Legend has it that King Arthur’s burial site is here, and that Glastonbury medieval Abbey was built to house the Holy Grail.
  • For nature: There are many beautiful parts of Somerset to explore and hike, from the Quantocks to the Somerset Levels. Exmoor National Park is wonderful mix of towering sea cliffs, high moors, streams and valleys.

  • Coach House (sleeps 4-5, dog friendly). Open-plan barn conversion with 2 bedrooms (kingsize + ensuite bathroom with tub; superking/twin with separate wet room).   • Vine Hut (sleeps 2, no dogs). Shepherd hut with kingsize bed, bijou shower bathroom, kitchen (fridge/freezer, induction hob, oven, coffee machine and basic supplies), living space with woodburner. Outdoor bathtub and firepit. No WiFi.
  • Lambing Shed (sleeps 2 + infant, dog friendly). Secluded cabin in an orchard with kingsize bedroom, shower bathroom, baby crib, open-plan living area with kitchen (fridge, freezer, induction hob, oven, coffee machine and basic supplies), alfresco wood-fired bath and firepit. No WiFi.
  • The Gypsy Caravan can be added on to bookings in the Vine Hut or Lambing Shed to sleep an extra 1 adult/ teenager, or 2 children under the age of 10 (extra cost, see FAQ)
