There are views that make you reach for your phone to capture them. And then there are those that simply stop you in your tracks. Corylus belongs firmly in the second camp. Set high above Ullapool, this architect-designed retreat looks out across Loch Broom, where clouds drift over distant peaks. Made up of 2 beautifully crafted apartments – Fjell and Fjord, which can be booked separately or together for 6 – it’s a place designed around the landscape rather than competing with it, with vast windows and sheltered decks keeping the view centre stage.

Bespoke timber joinery, birch plywood kitchens and warm, natural materials give the interiors a calm feel, while thoughtful details such as blankets for deck-side stargazing feel as though someone has anticipated exactly what you’ll want before you’ve thought of it yourself. The quality here comes from craftsmanship, practicality and a real love for the area (owners Sam and Andrea live locally). And although it feels wonderfully removed from the world, Ullapool is just 5 mins’ drive for seafood lunches and harbour walks. Beyond that are pebble beaches, white-sand bays, mountain trails and winding Highland roads; this is part of the North Coast 500. But the biggest draw is often back at Corylus itself: sitting by the window watching the loch turn silver in the evening light, and wondering how a view can look completely different every time you glance up.
